A flatfish cut across the bone into thick, generous pieces, so each one carries a band of dark mottled skin along the top and dense white flesh beneath. The meat is mild and gently sweet with a fine flake, and because these are bone-in they stay moist far better than a thin fillet under the same heat. Sear them skin-side down in a hot pan until the edge crisps and the flesh turns opaque, or steam with ginger and spring onion and let each piece come away from the bone on its own. Pat them dry first - a wet surface steams instead of browning.
