Long, narrow shells holding a thick strip of meat with a bright orange band of roe running through the centre. The flesh is firm and slightly springy while raw, then turns tender and sweet within seconds of meeting heat, which is the whole trick with these. Steam them with ginger and a splash of rice wine, lay them over a hot grill until the shells char at the edge, or slip the meat out and drop it into a wok. The roe is the richest mouthful in the shell, so keep it. Rinse briefly and they are ready.
