About this item
These are cold-water sweet shrimp landed whole, with translucent shells that shift from pale pink at the head into a deep coral red along the tail. Each one carries a pocket of bright green roe under the belly, and that roe is where most of the flavour sits. The meat is soft and faintly sweet, closer to raw scallop than to cooked prawn, with a clean oceanic finish that lingers. They arrive ready to eat: lay them over ice, set out a dish of soy and a little wasabi, and the work is done. Do not cook them - heat turns the texture to rubber and loses the point entirely.
